I need to transplant a 5' viburnum, and need to know when I should do this, and how to move it.

Do this in the late fall or early spring while it is dormant. If it hasn't broken dormancy yet, you can do this now. Dig as large a root ball as you can handle and make sure to provide adequate water until it is established. Here is a link that should help with the digging and transplanting process: http://www.inthegardenradio.com/v.php?pg=688
